What is L-cysteine?
L-cysteine (E920) is an amino acid used as a dough conditioner in bread, buns and pastries. It can be produced from human hair, animal feathers or bristles, or by bacterial fermentation / synthesis.
Why is its halal status uncertain?
The source is the problem:
- Synthetic or plant-fermented — halal.
- Animal feathers — doubtful, depending on the animal and slaughter.
- Human hair — most scholars consider using human-derived ingredients impermissible.
The label only says "L-cysteine" or "E920", never the source.
So, is it halal or not?
Because the origin is hidden, a precaution-first approach treats E920 as doubtful unless the product is certified halal or confirmed to use synthetic/plant-based L-cysteine.
How to check L-cysteine before you eat
- Look for a halal certification on bread and bakery products.
- Contact the manufacturer about their L-cysteine source.
